The following recipe was sent in by Pat Norman, of London Tours!

Iced Christmas Pudding

  • 1/4 pt. milk
  • 4 oz. marshmallows
  • 1 tsp. cocoa powder
  • 1 tsp. coffee powder
  • 2 oz. raisins
  • 1 oz. sultanas
  • 1 oz. currants
  • 2 Tbsp. sherry or brandy
  • 2 oz. cherries
  • 2 oz. chopped nuts
  • 1/2 pint double cream (whipped)

Put milk, marshmallows, cocoa and coffee powder in a pan - heat gently until melted and let cool. Mix fruit and sherry together and leave for 30 minutes. Combine all above ingredients and add cherries and nuts. Freeze for a short time until slightly thickened. Fold in the cream - place in pudding bowl and freeze until firm - turn out and decorate.

It is best to take it out of the freezer about an hour before use. Very rich and full of calories!
